Clover Club Cocktail Recipe

Featuring Little Juniper Signature Gin

Deliciously Sweet and Tangy

A great cocktail for those who like sweet raspberries.
 

Ingredients

  • 45 ml Little Juniper Signature Gin
  • 30 ml Lemon Juice
  • 30 ml of fresh or frozen raspberries or raspberry syrup (see below for details)
  • 15 ml simple syrup (not needed if raspberry syrup is used)
  • 1 egg white

 

Instructions

  1. Build the Base: Add the Little Juniper Signature Gin, lemon Juice, raspberries, simple syrup and egg white to a cocktail shaker.
  2. Shake:Shake for 10 seconds.
  3. Bring the Chill: Fill the shaker with ice and shake vigorously for another 10 seconds.
  4. Strain: Double strain into a chilled cocktail glass and garnish with a raspberry or two...or three.

Raspberry Syrup

  1. Add equal parts raspberries, water and sugar to a saucepan and heat on medium, careful not to boil.
  2. Stir until sugar has dissolved.
  3. Turn heat off and muddle the raspberries.
  4. Double strain into a bottle or jar.

History of the Clover Club Cocktail

The Clover Club cocktail originated as the signature drink of the Clover Club, a group of prominent businessmen who met at Philadelphia’s Bellevue-Stratford Hotel in the late 1800s. Once a symbol of sophistication for the well-heeled elite, its pink hue was considered masculine at the time. Over the years, as tastes shifted and pink became associated with femininity, the Clover Club fell out of favor, even landing on Esquire’s 1939 list of “10 Worst Drinks.” However, with the modern craft cocktail revival, this frothy classic has made a stylish comeback, often featuring dry vermouth and variations inspired by historical recipes.
